Easter is fast approaching and as I have had some time off I've been doing some cooking - Chocolate Cornflake Nests to be exact! These are little cakes I've been making ever since I can remember. It is a very simple, easy and quick recipe that doesn't really require any cooking at all.
But as you can see they look (and taste) delicious. Anyone can make them and I'm going to tell you how.
These are all the ingredients you are going to need to make 12 cakes:
70g of cornflakes
(I'm using ones without gluten because my mum has dietary requirements meaning she cannot eat gluten)
120g of chocolate
24 (almost a pack of) Mini Eggs
(These measurements are approximate. I just went with it when cooking and didn't weigh anything so you don't have to stick to them.)
The first thing to do is break up the chocolate into individual squares and put them in a glass mixing bowl.
Then boil the kettle and fill a sauce pan half full of water. Heat the water even more until it is bubbling. Leave the water on a steady simmer.
Place the bowl of chocolate onto the sauce pan. The steam from the water will melt the chocolate. Make sure the water is not touching the bottom of the bowl or it will burn the chocolate. Spread the chocolate along the bottom of the bowl so all the pieces are as close to the heat as possible speeding up the melting process.
(Instead of melting the chocolate on the stove you could melt it in the microwave. However chocolate is much easier to burn in the microwave and I find it melts better this way.)
Once the chocolate is fully melted turn off the heat, leave the water to cool and place the bowl of chocolate on a work service. Hold a tea towel under the bowl because the hot water vapour may drip off the bottom and when you place it down it will still be hot. At this point you can add the cornflakes. Gradually add them into the chocolate, mixing it thoroughly to cover all the cornflakes in chocolate.
Next put paper cases into a cupcake tray. Evenly distribute the chocolate cornflake mixture into the cases. I find it easiest to use both a tablespoon and a tea spoon when doing this.
Finally, decorate the Chocolate Cornflake nests with two mini eggs each (or more if you want to!) When you are happy with your Easter nests put them in the fridge for 15-20 minutes so the chocolate solidifies and holds the nests together. Then eat them of course!
